And in fact it turns out that in the dish and mashed potatoes, and fried small inflorescences sprinkled with breadcrumbs, the poached egg and Dutch sauce is an entertaining game, when the familiar taste of the cabbage fried in the egg is formed according to a different formula. For cabbage – cod liver, a real Russian delicacy, a delicate oily texture that perfectly emphasized the cabbage crunchiness. Or here is another adventure – Murmansk cod and mashed potatoes. Until now, the author of the best mashed potatoes in the world was the Frenchman Joelle Robuchon, but it never occurred to him to serve it with sprat sauce, and now it’s obvious – it was in this dish that the mashed potatoes prepared according to his recipe are really the best. And the cod itself is good, the meat is dense and at the same time gentle, like a living fish …
